Pressure Cooker BBQ'd Beef


This was a huge hit in our house and its so easy to make. I love using the pressure cooker and these days use it in place of the crock pot as my husband does not like anything made in a crock pot. Prep time for this recipe took about 5 minutes. The actual cooking time was one hour without me needing to be standing next to it. Everyone in the house loved the beef. As you can see in my picture I made open faced sandwiches but you could use the beef in hamburger buns or whatever you would like. I used homemade bbq that I have in the fridge but you can use bottled bbq sauce.

4-5 lb chuck roast or a cheap roast
1 onion, sliced
1 cup water
2 tablespoons oil
salt and pepper

Heat oil in pressure cooker. Season roast with salt and pepper. Place roast in the heated oil and brown on one side for about 2 minutes. Flip and brown the other side. Add onions and water. Close the lid on the pressure cooker. Bring to pressure, about 5 minutes, over medium high heat. Maintain pressure and cook 45-60 minutes. Allow to cool 5 minutes before opening. Remove beef and drain liquid. Shred beef and add the cooked onions, if desired, and add about 1 cup bbq sauce, more or less as your taste desires.

  3. Frieda- I love using the pressure cooker for meats. You can buy cheaper cuts of meat and make some really good meals. In a few days I will be posting my all time favorite pressure cooker recipe. I also have a recipe posted for pressure cooker stuffed bell peppers.

  5. Bottled I only use Bull's eye but I have several homemade recipes. The one I used tonight is
    2 tablespoons vegetable oil
    1 onion , minced
    1 clove garlic, minced
    1 teaspoon chili powder
    1/4 teaspoon cayenne pepper
    1 cup ketchup
    5 tablespoons light molasses or dark molasses
    2 tablespoon cider vinegar
    2 tablespoons Worcestershire sauce
    2 tablespoons Dijon mustard
    1 teaspoon Tabasco sauce
    Table salt and ground black pepper

    1. Heat the oil in a large saucepan over medium heat until shimmering. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, chili powder, and cayenne and cook until fragrant, about 15 seconds.
    2. Stir in the remaining ingredients and simmer, stirring occasionally, until the sauce is thickened, about 25 minutes. Season with salt and pepper to taste. Cool to room temperature before serving, about 1 hour.
